Banana cake recipe

Banana Cake
- 3 bananas, fully ripe
- 375 grams flour (all-purpose) (spoon & leveled)
- 1 tbsp flour
- baking soda (1 teaspoon)
- Cinnamon powder, 1/2 teaspoon
- softened to room temperature 170g unsalted butter
- 1/2 teaspoon salt
- sugar granules (200 g)
- 100 g brown sugar, light or dark, packed
- 3 room-temperature eggs
- 2 tsp vanilla extract (pure vanilla)
- At room temperature, 360 mL buttermilk
Cheese Cream Frosting
- 224g softened full-fat block cream cheese
- softened to room temperature 115gunsaled butter
- sugar 360g, plus an additional 100g if necessary
- 1 teaspoon vanilla extract (pure)
- a quarter teaspoon of salt
Instructions
- Preheat the oven to 177 degrees Celsius and butter a 10-inch square baking pan.
Cake making procedure
- bananas should be mashed using a mixer and put it aside.
- In a mixing bowl, combine the baking soda, flour, baking powder, cinnamon, and salt. Remove the item from circulation.
- For a 1 minute beat the butter on maximum speed with a stand mixer until smooth and creamy. Add the sugars and beat until well mixed.
- Use a rubber spatula to scrape up the bottom of the bowl and down the side . Combine the eggs, sugar, and vanilla extract in a large mixing bowl. Toss in the mashed bananas and beat until mixed.
- Scrape along the sides and up the bottom of the basin. On minimum speed, add the dry ingredients in three times, taking turns with the buttermilk, and mixing just until combined after each addition. Do not overmix the ingredients. It's fine if there are a few lumps in the batter.
- Pour the batter into the pan which was previously prepared. Preheat oven to 350°F and bake for 45-55 minutes. Because time taken to bake differ, keep checking on yours. When a toothpick inserted in the center comes out clean, the cake is done. If the top of the cake starts to brown too rapidly in the oven, cover it loosely with aluminum foil.
- Take the cake out of the oven and place it on a wire rack to cool. Allow to cool completely before using. To speed things up, I normally put it in the refrigerator for about 50 minutes.
Icing making process
- Beat the cream cheese and butter together on high speed in a large mixing bowl with a handheld or stand mixer fitted with a paddle or whisk attachment until smooth and creamy.
- Combine 3 cups confectioners' sugar, vanilla extract, and salt in a large mixing bowl. 30 seconds on low, then 2 minutes on high. Add the extra 1/4 cup confectioners sugar if you want the frosting to be thicker.
- After the cake has cooled, apply the icing. Before serving, chill the dish for 30 minutes. This aids in the setting of the frosting and the ease of cutting.
